If you go back 150 years, Sleepy Hollow was the sight of an Indian Village. Located right by a stream, it was perfect for a village; plenty of game in the hills, lots of wood for shelter and fire, and,  a natural hideaway from the elements.

 

With this in mind, we have created the most challenging race in Des Moines. It will test your ability to withstand elements, grueling terrain and ridiculous obstacles. Finishing this race will be a testament to your endurance, winning will elevate you to the same class as the warriors who used to call Sleepy Hollow home. Plus, if you win, you will get a Unique Hatchet, that will look awesome on your wall, or above your fireplace.

Chipotle & Orange Grilled Chicken

Chipotle peppers in adobo sauce contribute a rich smokiness to this quick orange-infused barbecue sauce.

INGREDIENTS
2 tablespoon orange-juice concentrate, thawed
1 tablespoon finely chopped chipotle peppers in adobo sauce, (see Note)
1 tablespoon balsamic vinegar
2 teaspoons unsulfured molasses
1 teaspoon Dijon mustard
1 pound boneless, skinless chicken breasts,, trimmed
Salt to taste

COOKING DIRECTIONS
Step 1
Preheat grill or broiler.

Step 2
Whisk together orange-juice concentrate, chipotle pepper, vinegar, molasses and mustard in a small bowl.

Step 3
Lightly oil the grill or broiler rack (see Tip). Season chicken with salt and grill or broil for 2 minutes. Turn, brush with the glaze and cook for 4 minutes, brushing occasionally with glaze. Turn again, brush with the glaze, and cook until the center is no longer pink, 1 to 2 minutes longer.

RECIPE TIPS
Note: Chipotle chiles in adobo sauce are smoked jalapeños packed in a flavorful sauce. Look for the small cans with the Mexican foods in large supermarkets. Once opened, they’ll keep up to 2 weeks in the refrigerator or 6 months in the freezer.

 

Island Limeade

 Take a trip to the islands in this simple tropical cocktail.

 INGREDIENTS
3 cups boiling water
1/3-1 cup sugar
1 1/4 cups freshly squeezed lime juice
6 ounces dark rum

COOKING DIRECTIONS
Step 1
Combine boiling water and sugar to taste. Stir until the sugar dissolves; chill. Add the lime juice to make limeade. Fill 4 tall glasses with ice and divide the rum among the glasses. Top with the limeade. Non-alcoholic variation: Omit the rum.
